Chicken and Egg Fried Rice
If you love Asian food but haven’t ever made it at home, it’s SO easy! This recipe will be in my cookbook, but here it is in case you want to make it tonight. Cheap and delicious? I’m in!

Cut chicken into small pieces and season with salt, garlic powder and pepper.

In a large high sided skillet, place 1T neutral oil and heat to medium high. Brown chicken on all sides until done, about 5-6 minutes. Set aside.

While chicken cooks, cook minute rice according to package directions.

In the same skillet you cooked the chicken, add the rest of the oil and heat until shimmering.

Add rice, soy sauce and sesame oil, stirring to combine and pressing into the skillet in a thin layer. Allow rice to crisp for 2-3 minutes before flipping.

Do the same to the other side.

Add peas and green onions, then make a well in the center of the pan.

Add eggs and scramble, mixing into rice when done.

Add chicken back to pan, stir and heat through for 3-5 minutes.
