The best way to describe this dish is basically like a white pizza (ricotta, mozzarella, Parmesan and garlic) but in PASTA form!!

    Bring a salted pot of water to a boil and cook pasta until al dente. ** reserve pasta water!

    Melt butter in a heavy bottom pot. Add garlic and stir - be sure not to burn the garlic!

    Whisk in ricotta cheese and combine until smooth.

  4. 4

    Stir in mozzarella and Parmesan cheese until melted.

  5. 5

    Season with salt and pepper.

  6. 6

    Add in cooked pasta and reserved pasta water.

    Combine and garnish with fresh parsley and extra grated cheese.
