Blackened Shrimp & Corn Penne in a Creamy Parmesan Sauce

Bring a pot of salted water to a boil and cook penne until al dente.

Add shrimp to a large bowl. Drizzle with EVOO and sprinkle with blackening seasonings. Toss to coat.

Add butter to a hot skillet. Spread shrimp into an even layer and cook for 2 minutes on each side. Remove to a seperate bowl.

Add heavy cream to the same skillet. Stir and scrape up any browned bits. Mix in tomato paste and combine until smooth.

Add grated Parmesan cheese- combine well.

Add corn and shrimp back to the pan- toss to coat.

Add cooked pasta and reserved pasta water. Combine until pasta is coated. Top with fresh parsley and extra grated cheese.
