Spicy Potato & Pancetta Salad

Boil potatoes for 9 minutes or until soft, adding peas in the last minute. Drain and set aside.

Cook pancetta or bacon until crispy (air fryer, oven, or stovetop). Save some of the bacon fat for the dressing which is going to add a nice smoky bacon note.

Make the dressing: combine red onion, chili, garlic, vinegar, mustard, Banghoek Chili Oil, honey, salt, and pepper. Set aside and let onions soften.

Toss potatoes and peas in the dressing, add crispy bacon, then toss in parsley and dill. Serve warm with an extra drizzle of chili oil and herbs.
