Combine the coarse-ground coffee with cold water in a large jar or pitcher. Stir to make sure all the grounds are saturated.

Add the cinnamon stick, nutmeg, vanilla bean, and cloves to the coffee mixture.

Cover the jar or pitcher and refrigerate it for 12-24 hours.

Strain the coffee through a fine-mesh sieve, coffee filter, or a cheesecloth into a clean jar.

Discard the coffee grounds and spices.

Stir in the maple syrup for a hint of sweetness and fall flavor.

Fill a glass with ice, pour the cold brew over it, and add milk or non-dairy milk if you like.
