Chili Oil Chicken Salad

say hello to your newest obsession. Now that my pregnancy heartburn is out of the way, I’m going in on all my fav spices again - starting with chili oil!

    Shred or chop the rotisserie chicken into bite-sized pieces and set aside in a mixing bowl.

    In a separate small bowl, whisk together the chili oil and mayonnaise until smooth and well combined.

    Add the finely minced shallot to the shredded chicken.

    Pour the chili oil mayo mixture over the chicken and toss until everything is evenly coated.

    Gently fold in the fried onions and scallions to the chicken salad for added crunch and flavor.

    Add salt as needed, adjusting the seasoning to your liking.
