High-Protein Plant Based Taquitos for One

Preheat oven to 400°F and lightly grease a baking sheet with olive oil to prevent sticking.

Sauté the diced onion, mushrooms, and bell peppers until they’re softened, about 5-7 minutes.

Add the plant-based grounds to the skillet and sprinkle with taco seasoning blend. Stir well to combine, adding a splash of veggie broth or water if the mixture seems too dry. Cook for another 2-3 minutes until the flavors meld together. Taste and adjust seasoning if necessary.

Warm the corn tortillas in the microwave for about 20-30 seconds. This will make them easier to roll.

Spoon the filling mixture evenly onto each tortilla.

Roll up the tortillas tightly around the filling, then either place them seam-side down on the prepared baking sheet or you can use a toothpick to secure the edge of the tortilla, but make sure to remove them before serving.

Once all the taquitos are rolled and sealed, lightly brush the tops with a bit of oil to help them crisp up in the oven.
