Saute 1 diced onion in olive oil, add 1lb of chicken and 1c of carrots. Season with s&p, garlic, paprika and Italian seasoning.

Add 1c of white wine and let cook down for 10min.

Add 1.5c of rinsed jasmine rice and 3c of chicken broth. Bring to a boil, simmer, cover and cook for 15-20min.

Add 1/3c of Parmesan and 5tbsp of parsley.
