Yield: 3 servings
Ingredients: 500 g pork mince (I used some amazing @eattelfit mince.); handful breadcrumbs; 1 egg; salt and pepper; tsp cumin; tsp coriander; 1 romano peppers; 3 large ripe tomatoes; 1 chilli; 2 shallots; 1 garlic clove; handful coriander; large glug olive oil; tsp paprika; pinch cayenne pepper; salt and pepper; handful almonds

There’s so much flavour from each element of this and the creamy dressing brings it all together to make a perfectly light evening or lunch dish. You could add some new potatoes to the salad to bulk it out further too.
