Pan Con Tomate with Burrata and Serrano Ham

    Grate the tomatoes into a bowl.

    Put a large pinch of salt on the tomatoes and leave for 10 minutes.

    Set aside the liquid and use it in salad dressings.

    Mix the tomato pulp with olive oil, salt, and pepper to taste.

    Toast the sourdough or bread and rub with garlic and olive oil.

    Spread the tomato on the toast, top with jamon, burrata, and basil.
