Thinly slice the beef into strips. Prepare two bowls. One with mixed egg and one with corn flour, garlic powders, chilli powder, salt and pepper.

Dip the strips in the egg and then coat in the flour mix. Heat a pan with veg oil an inch deep to a high heat. You can fry them in shallower oil if required.

When crispy remove and set aside. In a frying pan fry, sliced onion, 2 minced garlic cloves and a grated knob of ginger, sliced chilli. Cook for 30 secs and then add 2 tbsp of rice vinegar, 3 tbsp of soy, 2 tbsp of tomato purée, 3 tbsp of caster sugar, 2 tbsp ketchup, 2 tbsp of sweet chilli sauce.

Increase the heat so the sauce bubbles and starts to reduce for a couple of minutes. When ready add the beef in and stir.

Serve with egg fried rice and thinly sliced cabbage (with lime juice, sesame oil, rice vinegar, pinch of sugar, salt and pepper). Top with spring onions.
