Fried Rice Paper Dumplings
Perfect for a quick snack or a flavorful appetizer!

Heat 1 tbsp oil in a pan.

Add ginger, garlic and green onion to the pan and fry until fragrant.

Add pepper, carrot and cabbage and cook until soft but still slightly crunchy.

Remove from heat.

Place each rice paper wrapper in water until soft.

Place the wrapper on a damp cutting board.

Add about a tbsp of the vegetable mixture on the wrapper.

Fold the top of the wrapper down, the sides in and the bottom up to make a dumpling.

Repeat the last four steps until all the vegetable mixture is done.

Heat the remaining oil to a flat bottom pan.

Add dumplings once the oil is hot.

Fry until crispy, about 4-5 minutes on each side.
