Tomato & Mozzarella Pasta
Always an absolute winner… Made for 2 people

Fry off 2 diced up chicken breasts seasoned in the chicken rub spices from @jseasonings and then fry off until almost cooked and set aside.

In the same pan fry off 1 diced up red onion for around 5-7 mins or until soften then add 2 minced up garlic cloves and cook for another 2 mins.

Then add 1 tin or chopped tomatoes and 150ml of water and stir thoroughly then add 1 tbsp of the amatriciana spices and 1 tsp of dried basil stir through!

Allow the sauce to simmer for 10 mins then add your chicken and at this point boil your pasta (I use 80g dried per person).

Once the pasta is nearly cooked usually 9 mins in transfer it to your pan, stir throughly and turn the heat off, then transfer to your oven dishes, top with 45g of mozzarella and 10g of Parmesan and grill for around 5 mins and serve.
