Add ginger purée, garlic, coriander, and red chilli to a frying pan and cook until fragrant.

Add peppers (if using) and fry for a few more minutes.

Add chicken breasts and fry until seared on all sides.

Add yoghurt, chicken stock, and peanut butter. Stir and simmer for 20-25 minutes.

Serve with rice.
