Well it’s been a while! I’ve lost my foodie mojo over the last few months and I’m still trying to find it again but I made one of favourite @simplycook recipes tonight and it deserves a spot on the grid! I deviated from the original recipe a little bit but was still as amazing as always 😍

    Put pasta onto boil. Add the chopped shallots to a pan with the sliced chorizo, cook until oils release then add the diced chicken.

    Once browned add in the rosemary & garlic seasoning and the sliced tomatoes. Once soft add in the paste and cream with a little pasta water and simmer for a few minutes.

    Add in the pepper seasoning and grated Parmesan and stir well. Then stir in the drained pasta until everything is coated. Serve topped with parsley

    I served with a slice of garlic bread
