Cheese Stuffed Meatballs

First attempt with this recipe and it was SO tasty, definitely a new favourite!

    Add your mince meat to a bowl with 1/2 tsp each of black pepper, onion & garlic granules and paprika and mix together until combined.

    Cut the Babybel into quarters and section your mince into 8 equal parts. Flatten each part, place the Babybel in the middle and form into a meatball.

    Spray a pan with a little oil and add your meatballs once hot, cook until browned on all edges then remove from the pan.

    Add the onions and garlic to the same frying pan and cook until soft. Then add in the chopped tomatoes, stock pot/cube and remaining seasonings listed above. Cook for a few minutes then add meatballs back into the pan, cover and simmer for 10 mins. Remove the lid and cook for a further 5 mins until your sauce has thickened.

    Serve with 75g pasta and homemade garlic bread.
