This is such an easy weeknight dinner!

    Preheat oven to 350

    Combine seasonings

    Dice peppers and onions and add to lined baking sheet

    Cut chicken into slices and add to a baking sheet

  5. 5

    Add olive oil and season with season mix

  6. 6

    Bake for 20-25 minutes flipping chicken and veggies half way through

  7. 7

    Add 1/2 fresh squeezed lime

  8. 8

    Add jasmine rice to a bowl, top with chicken and peppers and onions, cheddar cheese, sour cream, guacamole, extra lime and cilantro
