Baked Eggplant Parmesan
Perfect Sunday dinner with spaghetti or spaghetti squash!

Slice eggplant. Add salt and let sit for 10 minutes and pat dry with paper towel

Add to a baking sheet with olive oil and bake for 20 minutes flipping half way through

Add sauce to baking dish. Add eggplant, mozzarella, basil, tomato sauce and repeat with another layer

Bake for 20 minutes or until mozzarella is bubbly

Top with parmesan cheese and more basil
