Maple Apple Chicken Skillet

    Preheat oven to 400 F. Lay your chicken breasts flat and carefully butterfly each breast, about 3/4 of the way through. Season both sides with salt and pepper.

    Over medium high heat, add 2 tbsp butter to a cast iron skillet until melted & frothy. Add both chicken breasts to the skillet & sear for 3 minutes each side.

    Remove from skillet once seared & carefully add your apple slices & cheese slices. You can fasten with string or toothpicks if desired.

    Return chicken to the skillet. Add all maple glaze ingredients in a separate bowl and whisk until combined. Using a pastry brush, generously coat both stuffed chicken pieces with the glaze.

    Place skillet in the oven and bake chicken for 20-25 mins or until internal temperature has reached 165 F. I allow the outer edges to brown & crisp.
