My take on a very classic dish from Shanghai, these are allium oil noodles. The best way to use up any scraps of onion, chives, and garlic in the fridge. This oil also tastes incredible in stir fries !!!

Ingredients

For allium oil

For 1 serving of noodles

Directions

    Thinly slice the spring onion and shallot.

    Mince the garlic.

  3. 3

    On low/medium heat cook the spring onion and shallots in the oil for 3 - 4 mins.

    Add the garlic and continue cooking for 10 mins until just golden brown.

    Strain the oil separating the crispy onion and garlic bits.

    Heat 2 tbsp of the allium oil with the soy sauce, pepper, salt and sugar. Allow to sizzle for 30 seconds and then toss in the noodles.

    Serve with lots of the crispy onion bits and fresh chives.
