Reverse Seared Pork Roast with Crackling

    Score the skin and salt the roast generously and place on a wire rack in the fridge overnight.

    Remove the roast from the fridge one hour before you intend to place it in the oven.

    Place in the middle of the oven at 100 degrees celcius till it hits 56 degrees celcius internally. It will take approximately 2-3 hours depending on thickness.

    Remove the roast from the oven and crank up the heat to 250 degrees celcius and place the roast in the middle of the oven again till it hits 62 degrees celcius internally - it will take 10-15 minutes, then remove it from the oven and let it rest for 30 minutes.
