Knead Masa Harina and warm water with a pinch of salt till it resembles playdough. Divide into 40 gram doughballs. Press in a tortilla press and sear on a hot pan for about one minute each side.

Add equal parts white vinegar and sugar to a pot and bring to a boil. Slice red onions very thinly. Boil for a minute and set aside.

Blend mango, red chili, and lime juice with a stick blender, then add chopped fresh cilantro.

Cut super thin slices of pork tenderloin and heat a pan over high heat. Add oil, when the oil is smoking add the pork and season liberally with a pork bbq rub. The pork is done when it got a nice golden crust.
