Mix the sauce ingredients together. Salt and pepper to taste.

Chop onions and lettuce.

Divide beef into 80 gram beef balls, place on the tortilla, smash it flat and season with salt.

Sear beef side down on a screaming hot pan for about a minute, then flip, add cheddar cheese and sear the other side briefly.

Place in a 80 degrees celcius warm oven to melt the cheese and keep hot while you make the rest.
