Stuffed Peppers with Avocado Crema

While your oven is preheating to 425°F, create your stuffing mix by sauteing your onions/mushrooms over a medium heat (with olive oil and salt) until caramelized (about 10-12 minutes).

Once finished, remove and set aside. In the same pan, cook your ground turkey with olive oil, garlic powder and salt to taste until fully cooked.

In a bowl, mix together your ground turkey, 2 cups of rice and onion/mushroom mix.

Cut your bell peppers in half and remove the cores and seeds. Lightly grease an oven safe baking dish, then place your pepper halves cut side up in the dish. Evenly fill your peppers with your ground turkey, rice, mushroom/onion mix. Cover with tinfoil, then roast in an oven for 30 minutes.

While your peppers are in the oven, create your avocado crema, by simply blending together all of the listed ingredients.

After 30 minutes, remove the tinfoil and sprinkle each pepper with your pepper jack cheese. Place back in the oven uncovered for an additional 20 minutes to allow your cheese to get golden and bubbly.

Top each pepper with the avocado creama and fresh cilantro. Enjoy!
