While your oven is preheating to 425°F, begin making the dough for your crust. In a large bowl, combine your flour, salt, sugar, milk, olive oil, avocado oil and vanilla extract together.

Be careful to not over mix and stop as soon as all ingredients are combined (over mixing will allow gluten to form and can make the dough tough).

In a tart pan, press your dough to spread it across the bottom and sides to form an even layer. You may not need to use all of the dough depending on how thick you like the crust.

Place your lined tart pan in the refrigerator while you finish preparing the rest of the recipe.

Next, make the topping. Add your sugar into a medium sized bowl. Then, cut 2 tbsp. of butter into small strips. Add that, along with your flour and salt into the bowl alongside your sugar.

Combine this mixture using a pinching motion and mix until you have pebble sized pieces of butter. It is okay to have some pieces of butter larger than others in the mixture, this will add to the rustic look to the tart!

Set this in the refrigerator to keep the butter cold.

Next, slice your plums and add it directly into your crust-lined tart pan. You can assemble it however you would like but I prefer to keep it a bit messy/free form as I think it adds to the overall look of the tart.

Finally, sprinkle your sugar topping evenly over the plums. Place your tart on a baking sheet to help catch any potential dribbles. Bake this in the oven for 35-45 minutes, or until it is bubbling, and the crust is golden brown.

Wait at least 2 hour before serving to allow the filling to set. Store in the refrigerator.
