    Preheat your oven to 325°F. Then in a large bowl, combine your rolled oats, coconut sugar, coconut chips, spices, nuts, and salt. Toss to combine.

    Then in a small sauce pan over a medium-low heat, combine your coconut oil, maple syrup, vanilla extract and pumpkin purée using a whisk. Stir over the heat for 3-4 minutes.

    Pour your wet mixture over top of your dry ingredients and stir to combine.

    Then on a parchment lined baking sheet, evenly spread your mixture out in a thin layer. Be careful not to overcrowd your pan, baking in batches if needed or using two separate baking sheets.

    Bake for 20-25 minutes undisturbed until golden brown. Remove from the oven and allow your granola to cool fully before storing in airtight containers. The granola will get really crisp and crunchy as it cools.


Notes

Serve over top of yogurt, oatmeal, or with milk!
