    Slice the green parts of the scallions into long strips, shredding by hand. Halve the white parts lengthwise.

    Heat oil in a pan and fry the white parts of the scallions until soft. Remove and set aside.

    Next, fry the green parts until crispy and golden.

    In the same oil, sauté the chopped garlic until fragrant. Add 1 tablespoon of dark soy sauce and 1 teaspoon of brown sugar. Stir until the sugar melts and everything is combined (1-2 minutes). Add 1 seasoning packet from the Indomie noodles. Stir well.

    Boil the noodles for 1-2 minutes until slightly soft. Drain and rinse with cold water to stop the cooking process.

    Add the noodles to the pan with the garlic sauce and toss until well-coated.

    Garnish with crispy scallions, sliced cucumber, and a squeeze of lime!
