    Melt butter with a bit of oil over medium heat. Stir in the onions with a pinch of salt. Cook, stirring often, until onions soften and caramelize (10-15 minutes). Set aside.

    In the same pan, add a bit more butter if needed. Stir in flour and cook for 1-2 minutes to remove lumps. Gradually whisk in the heavy cream and gochujang. Add garlic powder, smoked paprika, Kashmiri red chilli powder (if using), and salt and pepper to taste.

    Stir in the caramelized onions, a bit of ramen water, and the cheese powder from the ramen packs. Mix well.

    Add the ramen noodles to the sauce and mix until well coated. Top with fresh mozzarella and the remaining caramelized onions. Cover and cook until the cheese melts.
