    Mix soy sauce, vinegar, salt, and pepper. Toss with mushrooms.

    Combine flour, potato starch, and garlic powder.

    Coat mushrooms in the flour mixture.

    Heat oil in a deep fryer or large pot. Fry the mushrooms until halfway done, then remove them from the oil and let them cool slightly.

    Fry the mushrooms a second time until golden and crispy.

    Drain the excess oil on paper towels.

    Serve hot with mayo sprinkled with gochugaru, chopped spring onions, and lime or lemon wedges on the side.
