Zucchini Potato Hash Browns

Super easy to make at home, so delicious and crispy!

    Peel potatoes and grate them together with the zucchini.

    Press as much juice out of the shreds as you can.

  3. 3

    Transfer the shreds back to a bowl and add spices and cornstarch.

  4. 4

    Fry the hashbrowns in a bit of olive oil.

  5. 5

    Press them down into the pan so that they form a nice compact circle.

  6. 6

    Add some parmesan cheese if you like.

  7. 7

    Be careful while flipping them, maybe use a plate to help you.

  8. 8

    Top with fresh avocado, an egg and chili oil.
