Crispy flavorful rice with fresh cucumber and herbs, all tossed in a tangy dressing - this is what dreams are made of

    Mix your cooked rice with oil and curry paste and spread on a baking sheet. Bake at 200 C in the oven for around 30 minutes or until the rice forms crispy clusters!

    In the meantime, chop up your cucumber and herbs and add to a bowl together with the peanuts.

    Cut up your ginger and garlic and whisk them together with the remaining dressing ingredients in a separate bowl.

    When the rice is done, combine with your veggies and mix well with the dressing - done!
