Creepy Carrots on Purple Potato Mash

Directions

    Wash a handful of carrots and carve out scary face with a sharp kitchen knife.

    Put them on a baking tray with a bit of olive oil and salt and bake at 200 C for 20-25 minutes or until soft and golden.

    Make the purple potato mash with a boiled purple sweet potato, a splash of oat milk, and a small piece of vegan butter.

  4. 4

    Make the balsamic sauce by heating the ingredients listed above.

    Assemble the creepy carrots on purple potato mash with balsamic sauce.
