For the rice, add the water and coconut milk in a pot with the rice and bring it to a boil. Once boiling lower heat to low and let it cool for 15-20 minutes mixing occasionally.

Sauté garlic, onion, and ginger in oil in a pan until translucent and add your seasonings, spinach, tomatoes, coconut milk, and lentils then bring to a boil. Reduce the heat and let it simmer for 20 minutes or so or until the lentils are fully cooked. (Add water as needed for desired thickness)

Serve with your coconut rice, fresh coriander, salt & pepper and now you’ve just created the best comfort dish for all the colder days to come!
