Cut your tomatoes and put them to the side, add your ghee to a hot pan and then add cumin seeds. Once the cumin seeds are sizzling, add the rest of the spices and fry just until sizzling / aromatic and then quickly add in your cut tomatoes.

Add a generous amount of kosher salt and cook down the tomatoes. As they soften and release their juices, press down on them with the back of your spoon to create a jammy consistency. Once you have a consistency you like, taste and add more salt and juice of half a lemon, or to taste.

Cut your banana and add to a hot pan with ghee. Fry for a few minutes until they caramelize on each side. Assemble & enjoy!
