Protein Waffles with Fried Eggs, Avocado, Greens and Cherry Tomatoes

A meal prep idea for the week, these protein waffles can be frozen and reheated in the toaster, microwave or oven in the morning!

    Mix together eggs, milk, and vanilla in a large bowl.

    Add in flour, protein powder, baking powder, and baking soda. Mix until combined.

    Add in melted coconut oil and mix again.

    Coat waffle maker with coconut oil or non-stick cooking spray.

    Pour batter onto the waffle maker until the mold is filled. Let cook for about 1 to 2 minutes.

    Flip waffle maker and open. If it needs a little more time to cook, close and flip over, let cook for about 20-30 seconds longer.

    Use non-stick tongs to remove waffle from iron.
