Grind the cookies in a food processor and melt the butter. Add lemon zest, then mix them, and tamp into your pan (bottom and sides should be about the same thickness).

Beat eggs, add cream cheese, greek yogurt then sugar and salt. Mix thoroughly, add lemon juice and starch. Pour the cream into your pan with a ready-made bottom and level it.

Place the cheesecake pan in a roasting pan, filling it with hot water. Bake in an oven preheated to 150 degrees C for about 60 minutes.

When the cheesecake is ready, don’t take it out of the oven right away to avoid cracks. Open the oven door and leave it there until it cools completely to room temperature. Then refrigerate for 1-2 hours.

Combine all ingredients except butter in a saucepan and cook until thickened. Then turn off the heat, add oil, mix and cool to room temperature.

Whip the cream, add the cooled curd to the cream, and then spread it with a spatula on the cheesecake. Sprinkle with lemon zest and you’re done!
