Greek Orzo Bake with Olives + Feta

Preheat oven to 400 F.

In a Dutch oven or deep oven-safe skillet, heat olive oil over medium heat. Add onions and cooked until softened, 3-4 minutes. Add garlic and cook until fragrant, 30-60 seconds.

Add orzo, olives, tomatoes, white beans, herbs and broth.

Cover and place in oven, and bake for 20-30 minutes or until orzo is al dente (okay if there's a little liquid remaining). Remove and let stand 5 minutes.

Stir in half the feta and juice 1/2 lemon. Top with remaining feta and optional pesto drizzle. Eat!!
