Strawberry Shortcake Bars

These bars taste like those strawberry shortcake popsicles but are made with better-for-you ingredients :)

Strawberry Layer

Directions

    Line a 8×8 baking dish with parchment paper, set aside.

    To make the crust, add the cookies, almond flour, oil, vanilla, sweetener, & salt to a food processor, processing until you reach a fine, sandy texture.

    Press the cookie base into the pan, spreading it out evenly.

    Next make the strawberry crumb by adding the cookies & freeze dried strawberries to a ziplock bag & crushing them until you reach a crumby consistency.

    Set aside.

    To make the strawberry filling, add all of the ingredients to a blender & blend until completely smooth & creamy.

    Taste & adjust to your liking (more strawberry jam or more sweetener).

    Spread the strawberry layer over the base.

    Sprinkle the crumb topping over the strawberry layer, gently pressing it down into the top.

    Place the pan in the freezer for 3-4 hours or until completely firm.

    Remove from the pan & let thaw 10 minutes before cutting them into bars & another 10-20 min before serving.

    Store leftovers in freezer.
