    Preheat the oven to 400°F (200°C).

    Toss carrots with olive oil, garlic powder, salt, and pepper until evenly coated. Bake for 20 minutes, until tender.

    Make the whipped goat cheese. In a mixing bowl, combine goat cheese, Greek yogurt, and hot honey. Mix with a hand mixer (or use a food processor) until smooth and creamy.

    Serve by spreading whipped goat cheese onto a serving dish. Top with roasted carrots, a drizzle of hot honey, toasted pine nuts, and parsley.
