Slice tomatoes in half (if they are bigger deseed, small ones can have seeds)

Sprinkle salt and thyme or other dried herbs

Bake at low slow heat for 6-8 hours (110°C) and check every hour

Or dehydrate

Let cool and pack right and put into glass jars

Cover with avocado or olive oil

Add a clove of garlic, sprig of herbs or chili if desired

Store in a cool dark place

Or in the fridge (note if using olive in the fridge it will get solid)
