    Heat the EVOO in a frying pan, add the onion, courgette and red pepper and fry until everything is nice and soft

    Add the cherry tomatoes and fry until they have softened. Then transfer all of it to a square baking tin.

    In a bowl, whisk the eggs, milk, herbs, mustard and half of the cheese.

    Pour the egg mix into the baking tin, mix well with the veg.

    Top with the olives and remaining cheese and then bake for 25-30 mins at 180C fan.
