Caramelised Onion, Fig and Goats Cheese Slice

    Heat some oil in a pan, add the onions and cook until soft, browned and caramelised, adding the sugar about half way through, about 20 mins (stir frequently to avoid the onions burning).

    Remove the onions from the pan and add the figs.

    Gently pan-fry the figs for a few mins until they’ve softened a bit.

    Mix together the herbs, eggs, milk and mustard.

    Add the onions to a lined square baking tray; spread them out evenly.

    Add the egg mixture, then space the figs out in the mixture; finally add the goats cheese.

    Bake for 25-30 mins at 180C fan in the oven.
