    Mix the tempeh with the soy sauce and cornflour, add to a lined baking tray and bake in the oven at 180C fan for 20 minutes.

    Heat the oil in a pan, add the onion and fry on a medium heat, stirring frequently until soft and translucent.

    Then add the garlic and ginger for a few mins.

    Add the tomato and cook until it softens down into almost a paste (about 10 mins).

    Add the spinach and stir until it softens

    Add the curry powder, coriander powder, turmeric and season well with salt.

    Add the water, put a lid on and cook for 10-15 mins.

    Blend until almost smooth but leave some texture, then add the tempeh and cook for another 5 mins until the sauce has thickened a bit more.

    Stir in the garam masala, sugar and cream and serve.
