Rainbow Beetroot and Lentil Salad

For the dressing

Directions

    Boil the beetroots in a saucepan.

  2. 2

    Allow the beetroots to cool and then peel and slice them into medium sized wedges.

  3. 3

    Mix all the dressing ingredients together.

  4. 4

    Add the beetroot wedges, lentils and red onion to a large salad bowl, pour the dressing over and mix well.

  5. 5

    Mix in the mint and crumble in the feta.
