Pierce the sweet potato a few times with a knife then microwave on 1000W for 5 mins.

Mix the tuna, chilli flakes, spring onion, parsley, lemon juice, cottage cheese and jalapeños in a bowl until combined.

Slice the sweet potato open, top with the tuna mix and sprinkle some pumpkin seeds on top.
