Herby Chicken and Spinach Filo Pie

    Heat the olive oil in a round ovenproof dish, fry the spring onions for a few mins then add the garlic and fry for a further few mins.

    Add the frozen spinach and cook for a few mins.

    Add the chicken, stock, mustard and sage, bring to a simmer and cook for 10 mins.

    Stir in the creme fraiche, black pepper, dill and parsley.

    Remove from the heat, scrunch the filo sheets and place on top of the mixture until its all covered.

    Brush with a little melted butter, and bake for 25 mins at 180C fan in the oven.
