Add the potatoes to a saucepan of boiling water and cook them until they’re almost fully cooked (about 10 mins).

Preheat the oven to 180C fan. Add the red onion, garlic cloves, lemon wedges, potatoes and chicken thighs to a baking tray.

Drizzle liberally with extra virgin olive oil and season with salt and pepper before roasting for 30 mins.

Increase the temp to 200C fan; add the tomatoes, wine and olives, and cook for another 30 mins.

Garnish with the feta and oregano, and a drizzle of EVOO.
