Heat the EVOO in a large frying pan, add the onion and sage leaves and fry for 10 mins over a medium heat.

Add the butternut squash and continue to fry for 5-10 mins.

Add the spinach and cook until it has wilted down properly.

Transfer the veg into a lined square baking dish.

In a bowl, mix the eggs, milk, mustard, half of the cheese, the salt and pepper until evenly combined.

Pour the egg mixture over the veg, mix gently, sprinkle with the remaining cheese and then bake for 25-30 mins at 180C fan.
