Place seasoned steak on a wire rack with a cutting board underneath in the fridge for several hours or longer.

Blanch broccolini in salted boiling water for 1 min then sauté on medium high heat 2-3 minutes in oil & minced garlic.

Make creamy sage mushroom sauce: sauté mushrooms in butter until softened, add garlic, flour, chicken broth, heavy cream, sage, oregano, and pecorino romano. Simmer until thickened.

Make creamy mashed potato: boil potatoes until tender, mash with heavy cream, garlic salt, and pecorino romano. Add melted butter and season with salt and black pepper.

Cook ribeye steak to desired doneness, serve with creamy sage mushroom sauce and creamy mashed potato.

Garnish with fresh parsley.
