Shrimp with Cherry Tomatoes and Spinach

    In a small saucepan, heat up the soy sauce, mirin (or Japanese vinegar), lime juice, and cane sugar. Let it come to a boil and simmer for 3-5 minutes until slightly thickened.

    Place the cleaned shrimp in a baking dish and glaze with the prepared sauce. Bake the shrimp in a preheated oven at 200°C (392°F) for 10 minutes.

    Meanwhile, heat olive oil in a pan, add halved cherry tomatoes, and sauté until they release their juice. Add the spinach and cook until wilted. Pour in the heavy cream and simmer until the cream thickens.

    To serve, plate the tomatoes and spinach, top with the baked shrimp, and drizzle with the shrimp’s cooking sauce.
